    Snacks and Treats

    Munchie Bars

    With thanks to June Fleming, from whose recipe this is adapted.

    1 cup butter/margarine
    1 cup peanut butter
    2 cups brown sugar
    2 eggs
    1 tsp vanilla extract
    2 cups whole wheat flour
    2 tsp baking powder
    1 cup chocolate chips
    1 cup rolled oats
    1 cup trail mix (dried fruits and nuts)

    Preheat oven to 350F. Grease a jellyroll pan.

    Cream 1 cup butter/margarine, 1 cup peanut butter, 2 cups brown sugar, 2 eggs, and 1 teaspoon vanilla extract in a very large mixing bowl.

    Mix 2 cups flour (whole wheat is good, but white, or a combination will do) with 2 teaspoons baking powder. Stir into peanut butter mixture.

    Stir in 1 cup chocolate chips, 1 cup rolled oats, and 1 cup trail mix.

    Press mixture into jellyroll pan, and bake for half an hour.

    Important nutrients: Protein, Vitamin B1, Vitamin B5, Biotin, Vitamin E, Phosphorus, Potassium, Copper. Other nutrients may be present depending on contents of trail mix.

    Peanut Butter No-Bake Cookies

    1/2 cup cocoa
    2 cups sugar
    1/2 cup milk
    12/ cup peanut butter
    2 cups quick oats
    pinch salt
    1 tsp vanilla

    To a medium-sized saucepan, add:

    1/2 cup cocoa
    2 cups sugar
    1/2 cup milk
    pinch of salt

    Heat the mixture slowly, constantly stirring to prevent burning. Check often for signs of boiling. Boil for 1 minute. This is very important. If you boil too long, the cookies turn out rock hard; don’t boil long enough and the cookies will be grainy from the sugar.

    Remove from heat and add:

    1 teaspoon vanilla
    1/2 cup peanut butter
    2 cups quick oats

    Mix together. Then you can either drop spoonfuls onto a greased cookie sheet to make actual cookie shapes, or spread the mixture into a greased pan and cut off what you want (as I usually do).

    Important nutrients: Not very high in nutrients, but has some quantity of B1, B5, biotin, and potassium.

    Peanut Butter Stuff

    2 cups powdered milk
    1 to 1/2 cups peanut butter
    1/2 to 1 cup honey

    Mix to create a substance with the consistency of playdough. May be eaten plain or used as filling for chocolate peanut butter cups.

    Important nutrients: Protein, potassium, calcium, phosphorus, biotin, thiamine (B1), niacin, B5, B6, folate, vitamin E, sugar.

    Dinner Entrees

    Crockpot Chicken Cacciatore

    6 to 8 skinless chicken breasts (preferably boneless)
    2 to 3 cans diced tomatoes*
    1 bell pepper, chopped
    2 to 3 ounces mushrooms, sliced

    Seasonings (all optional):
    salt
    pepper
    crushed red pepper
    minced onion
    garlic*
    parsley*
    oregano*

    [*I usually get the canned tomatoes already seasoned with parsley, garlic, and oregano.]

    Place chicken breasts in crockpot/slow cooker. In a bowl, combine tomatoes, bell pepper, and mushrooms. Season to taste. Pour mixture over chicken. Cook for 4 to 5 hours (or until chicken is cooked all the way through).
